Soft poached quails egg wrapped in flakes of smoked haddock poached in milk and star anise, rolled in bread crumbs and cooked
to perfection.

Goose confit with oranges and cloves for hours. then shredded and wrapped in pastry.

An absolute Christmas classic done the way it should be! We take tiger prawns and gently cook them in a bloody Mary cocktail and finish with shredded apple and poached lobster.

A Vegetarian meal that is the envy of meat eaters. Layers of “Sous Vide” root vegetables encased in a wild mushroom duxelle and baked in home-made butter pastry.

Butter baked sea bass with citrus herb crust on chard leeks, turned root vegetables cauliflower beignets and saffron sauce.
